Lasan Ka Achar - Garlic Pickle

Ingredients:

1/2 teaspoon turmeric powder (haldi)
1 1/2 teaspoons salt
2-3 teaspoons chilli powder
1 teaspoon fenugreek seeds (methi dane)
2 teaspoon mustard seeds (rai)
3 cups garlic, peeled
1/2 cup oil
3-4 tablespoons lemon juice


Method:

1. Heat oil in a large frying pan on medium heat and fry garlic until light brown, about 5 - 8 minutes. Keep aside to cool at room temperature.

2. Dry roast the mustard and fenugreek seeds and coarsely grind them.

3. In a large bowl, combine garlic with oil, chili powder, salt, turmeric powder, fenugreek and mustard. Add lemon juice and stir with a wooden spoon to mix the ingredients.

4. Store it in an airtight glass or plastic container. Stay fresh up to one month.
